RECIPE: Creamy Chicken Vegetable Soup

I recently made up a recipe that we all really enjoy, especially Noah and Claire. I like it because I can basically stick any vegetable in it w/o protests from Noah. He likes many vegetables, but can't eat potatoes w/o gagging and detests zucchini. I'll list some of the stuff I usually put in, but just be creative! All the vegetables need to be cut up into chunks, though bite-sized is not necessary. You'll be blending it all in a food processor or blender anyway, so don't waste your time chopping them into small pieces.

Creamy Chicken Vegetable Soup

1 quart chicken broth
2 cups cooked chicken, cut into small pieces
1 cup cooked brown rice (optional)
onion
garlic
zucchini
broccoli
celery
carrots
potatoes
1/2 cup cream
1/2 cup butter
Sea salt and ground black pepper to taste

Combine the broth and chopped vegetables in a large pot. You want to add enough veges so they are sticking out of the broth; they will cook down. Simmer on medium low heat until veges are cooked.

Place broth/veges in a food processor or blender and blend until fairly smooth. Transfer back to the pot and add the chicken and rice, if desired. Heat thru. Stir in the butter and heat until melted. Add cream, stir, and season w/ salt and pepper. Serve.

Hi! I wasn't sure where to ask this, so I just decided to post at the first recipe I found in your blog. I've been using your whole wheat bread recipe for several weeks now & loving it! Thank you for making it available on the web. I've tried it with yougurt & buttermilk, as well as kefir, and kefir definitely wins, hands down. I was wondering if you prepare your own kefir grains or if you store buy them. So far I have only used store bought kefir & it is rather expensive, so I am considering ordering the grains to culture myself. I'm just hoping culturing at home will give me the same great taste & texture, and that the added work of making the kefir won't be too much of a burden. Any comments welcome. You can email me personally at hensontribe @ gmail.com Thank you...Kristie
